The invention provides batter-like compositions including flour or flour replacement ingredient, sweetener, a fat source, and a chemical leavening system, wherein at least a portion of the fat source is provided as an emulsion to the batter-like composition. The resulting batter-like compositions are capable of being formed into discrete product pieces (such as pucks), and maintaining the puck form throughout storage and handling of the batter-like composition prior to baking. The invention further provides methods of preparing batter-like compositions having a discrete form, and methods of using such inventive batter-like compositions to provide baked goods.
L'invention concerne des compositions de type pâte comportant de la farine ou un succédané de la farine, un édulcorant, une source lipidique, et un agent levant chimique. Au moins une partie de la source lipidique sert d'émulsion à la composition de type pâte. Les compositions de type pâte résultantes peuvent être formées en morceaux de produits discrets (par exemple des palets) et conserver la forme de palet durant le stockage et la manipulation de ces compositions avant la cuisson. L'invention concerne en outre des procédés de préparation de compositions de type pâte présentant une forme discrète, ainsi que des procédés d'utilisation de ces compositions en vue de fournir des produits de boulangerie.
