The invention relates to a beet processing process comprising at least the following steps: washing of the beets; partial pressing of the beets for the production, on the one hand, of a sugar-containing press cake at more than 20% relative to the dry matter content and, on the other hand, of a sugar juice at a concentration greater than 15% dry matter content; separation of the press cake and of the sugar juice. The invention also relates to animal nutrition, fermentation substrates and edible sugar based on the products obtained from this beet processing process.

L'invention concerne un procédé de transformation de betteraves comprenant au moins les étapes suivantes : lavage des betteraves; pressage partiel des betteraves pour l'obtention d'une part, d'un gâteau de pressage sucré à plus de 20% par rapport à la matière sèche et, d'autre part, d'un jus sucré à une concentration supérieure à 15% de matière sèche; séparation du gâteau de pressage et du jus sucré. L'invention concerne également des nutritions pour animaux, des substrats de fermentation et du sucre alimentaire à base des produits obtenus à partir de ce procédé de transformation de betteraves.
