C-5125 CAKE DONUT FORMULATION AND PRODUCT Abstract of the Disclosure A protein fortified cake donut formulation is disclosed which contains an effective amount of a whey protein concentrate to increase the specific volume and increase the fat absorption of the donut product formed therefrom as compared to the donut product formed from a formulation not containing the whey protein concen- trate. The whey protein concentrate preferably com- prises a protein content of from about 40% to about 90%, by weight, a lactose content of from about 5% to about 30%, by weight, and an ash content of from about 1% to about 18%, by weight. * * * * * *
