A novel calcium complex for the fortification of beverages and foods, especially milk, is disclosed. Fortifying complexes are comprised of a calcium source and a negatively-charged emulsifier with or without an organic or inorganic acid or a salt thereof. These complexes have been found to be particularly effective in fortifying milk and milk-protein containing beverages without coagulation of the proteins or without significantly changing the texture of the product.

L'invention concerne un nouveau complexe de calcium servant à renforcer des boissons et des produits alimentaires. Ces complexes sont composés d'une source de calcium et d'un émulsifiant chargé négativement et contenant ou non un acide organique ou inorganique ou un de ses sels. Ces complexes se sont avérés particulièrement efficaces pour renforcer des boissons contenant du lait et des protéines de lait sans provoquer de coagulation des protéines ni de modification importante de la structure du produit.
