A canola protein isolate having a protein content of at least about 90 wt% (Nx 6.25) is employed as an at least partial replacement for at least one component providing functionality in a food composition. The canola protein isolate is a blend of canola protein isolate in the form of an amorphous protein mass formed by settling the solid phase of a dispersion of protein micelles and mixing the amorphous mass with concentrated supernatant from the settling step and drying the mixture.

La présente invention concerne un isolat de protéine de canola ayant une teneur protéique d'au moins 90 % en poids (Nx 6,25), utilisé en tant que produit de remplacement au moins partiel d'au moins une composante responsable de la fonctionnalité dans une composition alimentaire. L'isolat de protéine de canola est un mélange d'isolat de protéine de canola se présentant sous la forme d'une masse protéique amorphe formée par dépôt de la phase solide d'une dispersion de micelles protéiques, avec un surnageant concentré issu de l'étape de dépôt, le mélange étant ensuite séché.
