Coated organic acid preparations for preserving bakery products (excluding those produced by yeast fermentation) wherein an organic acid is coated with a coating having a melting point of 64 to 98~C. By adding the coated organic acid preparations to dough, bakery products having excellent preservation properties can be obtained without affecting the volume, appearance, taste and smell of the baked products.

L'invention concerne des préparations d'acides organiques enrobés permettant la conservation de produits de boulangerie (excepté les produits obtenus par fermentation de levure). Selon le mode de réalisation décrit dans cette invention, l'acide organique est enrobé avec un enrobage présentant un point de fusion compris entre 64 et 98·C. L'adjonction de préparations à base d'acides organiques enrobés à une pâte permet d'obtenir des produits de boulangerie présentant d'excellentes propriétés de conservation sans en affecter le volume, l'apparence, le goût ou l'odeur.
