Abstract of the Disclosure The specification discloses a concentrated protein- aceous food material which is suitable for the production of various cooking foodstuffs resembling those of live- stock meat upon rehydration and which has a texture like that of livestock meat and shows an excellent water- retaining property. The material is obtained by adding an edible salt to marine animal meat to adjust the pH value of said meat in the range of from 6.5 to 7.7, depriving the resultant prepared meat of fats and water by the use of a hydrophilic organic solvent, and drying the resultant meat.
