ABSTRACT A dry free-flowing particulate composition containing from 70-95% by weight lipid is made by drying a liquid emulsion of lipid in an aqueous solution of sodium caseinate an dextrin having a dextrose equivalent of less than 10, preferably 2 - 3. The dry composition can be used as a vehicle for lipid soluble dietary components such as vitamins and carotenoids, and can protect unsaturated oils against oxidative deterioration.
