A texturized egg protein product comprises an extrudate of a composition comprising about 20-80% by weight of food grade protein and about 20-80% by weight of an edible starch, wherein the food grade protein comprises at least 50% by weight of dried powdered egg white. The texturized egg protein product can be used as a meat substitute, meat extender, snack food, or like food product.

L'invention concerne un produit de protéine d'uf texturé comprenant un extrudat d'une composition d'environ 20-80% en poids de protéine de qualité alimentaire et d'environ 20-80% en poids d'un amidon comestible. La protéine de qualité alimentaire comprend au moins 50% en poids de blanc d'uf en poudre séché.
