ELECTYROLYTIC TREATMENT OF PROTEIN ABSTRACT OF THE DISCLOSURE A process for the treatment of a vegetable protein is disclosed wherein the disulfide bonds of the protein are electrolytically reduced to provide a protein of improved functionality. Electrolytic reduction also results in un- expected removal of many of the naturally occuring pigments contained in a vegetable protein, such as soy protein, to provide a protein of improved whiteness. The process includes electrolytically reducing an aqueous slurry of the vegetable protein material having a pH of between about 4.5 and 8 and a proteinaceous solids level between about 1 and 20 by weight to improve the whiteness of the protein material.
