ABSTRACT OF THE DISCLOSURE The invention is a method of preparing texturized, flaked protein material. Protein material, containing at least 30% protein by dry weight and being capable of texturization, is fed in the form of fine particles to a processing zone. A heated pressurized gaseous processing fluid, including steam, is fed into the processing zone, the temperature of the fluid being at least 250°F. The fluid raises the pressure in the processing zone to at least 15 p.s.i.g. The protein material is removed from the processing zone to a zone of lower pressure, thereby texturizing and expanding the protein material. The expanded, texturized protein material is then flaked while in a pliable condition.
