A method for selecting flavors and aromas for snack foods in order to sustain long-term product sales to target demographics. The method involves identifying flavor and related aroma drivers that elicit an emotional response from the targeted demographic group by consumer testing. The flavor drivers are then incorporated into the food product by, for example, coating the product with a flavored oil.

L'invention concerne un procédé de sélection de goûts et d'arômes pour des collations afin d'assurer des ventes de produits à long terme à des groupes démographiques cibles. Ce procédé consiste à identifier un goût et des éléments d'arôme associés qui sélectionnent une réponse émotionnelle dans le groupe démographique cible au moyen de tests effectués auprès des consommateurs. Les éléments de goût sont ensuite incorporés dans le produit alimentaire par exemple par enrobage du produit avec une huile aromatisée.
