Flavouring materials may be produced from filamentous fungi by contacting them with water at a temperature sufficient to reduce their nucleic acid content and concentrating or separating solids from the resulting aqueous solution. The materials may be further subjected to a chemical reaction for example with a sulphur containing amino acid.

On peut produire des aromatisants à partir de champignons filamenteux en les mettant en contact avec de l'eau à une température suffisante pour diminuer leur teneur en acides nucléiques, puis en concentrant les solides ou en les séparant de la solution aqueuse obtenue. On peut ensuite soumettre les substances à une réaction chimique, par exemple avec un acide aminé soufré.
