The invention relates to a mixture of salts, comprising two or more salts of formulas M(X)2 and M(X) (OH) wherein M is an alkaline-earth metal cation and X is an organic carboxylic acid anion, the alkaline-earth metal being one (or more) alkaline-earth metal (s) and the organic carboxylic acid being one (or more) organic carboxylic acid(s). Preferably, the alkaline-earth metal is calcium and the organic carboxylic acid is propionic acid. The invention also relates to a solution or suspension, comprising water and dissolved or suspended therein said mixture of salts. And to a dough, comprising said mixture of salts in addition to flour, water, yeast and common salt. And to a method of making a bread product comprising baking said dough, and to a bread product obtainable by said method.
L'invention concerne un mélange de sels, qui comprend deux ou plusieurs sels de formules M(X)¿2? et M(X) (OH), dans lesquelles M est un cation de métal alcalino-terreux et X est un anion d'acide carboxylique organique, le métal alcalino-terreux étant un (ou plusieurs) métal (métaux) alcalino-terreux, l'acide carboxylique organique étant un (ou plusieurs) acide(s) carboxylique(s) organique(s). De préférence, le métal alcalino-terreux est un calcium et l'acide carboxylique organique est un acide propionique. L'invention concerne également une solution ou une suspension contenant de l'eau et dans laquelle ledit mélange de sels est dissout ou en suspension. L'invention concerne en outre une pâte de cuisson contenant ce mélange, ainsi que de la farine, de l'eau, de la levure et du sel courant. L'invention concerne enfin un procédé de fabrication d'un produit panifié consistant à cuire au four ladite pâte de cuisson, et un produit panifié obtenu par le procédé de l'invention.
