The dough can be formulated for extended frozen storage stability through the addition of hydrophilic colloids, film-forming proteins and surfactants. The process comprises preparing a yeast-containing dough under ambient temperatures, fermenting the dough for at least five minutes to produce a dough that is not sensitive to changes during frozen storage, dividing and forming the dough into separate portions and proofing to allow additional fermentation, and freezing the portions to core temperature of -1.0 C to -25.0°C.
