A frozen filled, yeast-bread product and a method for producing the same, the method including coextruding an unrisen yeast-bread dough and a filling through an extruder that is capable of at least encasing the filling with the unrisen yeast-bread dough to form a filled unrisen yeast-bread dough (16); shaping the filled, unrisen yeast-bread dough into a consistent elongated shape (20); proofing (24); baking (28), enrobing (32) and freezing the filled, unrisen yeast-bread dough to form a frozen, filled yeast-leavened bread product (38) that experiences substantially no leaking of filling from out of the bread product.
L'invention concerne un produit panifié, fourré et congelé et un procédé de fabrication correspondant. Ledit procédé consiste à co-extruder une pâte à pain non levée contenant de la levure et un fourrage à travers un extrudeur qui peut enrober le fourrage à l'aide de ladite pâte à pain non levée pour constituer une pâte à pain à la levure non levée fourrée (16). Le procédé consiste également à donner une forme (20) consistante allongée à ladite pâte, apprêter (24), cuire (28), enrober (32) et congeler la pâte à pain non levée fourrée à la levure pour former un produit panifié, fourré, congelé contenant de la levure (38) qui ne connaît pas de fuite du fourrage du produit panifié.
