A fume hood with an adjustable baffle system includes a housing with a chamber and a baffle system disposed in the chamber. The baffle system includes a plurality of baffle plates and a plurality of support brackets for releasably securing the baffle plates in substantially end-to-end relation in the chamber. The support brackets allow adjustment of at least one plate to vary the gap or distance between the plate and an adjacent plate. -11-
