Process for the preparation of a hydrolysed casein product comprising tripeptides VPP, IPP and /or LPP, wherein a substrate comprising casein or casein fragments is subjected to enzyme treatment wherein the enzyme is derived from Aspergillus, wherein the enzyme concentration is 2-10 wt.% based on casein and that the enzyme has a high proteolytic activity.

La présente invention se rapporte à un procédé de préparation d'un produit à base de caséine hydrolysée comportant des tripeptides VPP, IPP et/ou LPP, selon lequel un substrat comportant de la caséine ou des fragments de caséine est soumis à un traitement enzymatique au moyen d'une enzyme dérivée d'<i>Aspergillus</i>, la concentration de l'enzyme étant comprise entre 2 et 10 % en poids par rapport à la caséine et l'enzyme présentant une activité protéolytique élevée.
