An ice confection product having a vol-ume of from 1 to 20 ml and a thickness of greater than 5mm comprising an antifreeze protein, wherein .DELTA. modulus/original modulus >= 0.4, and/or .DELTA. strength/original strength >= 0.4; providing that when .DELTA. modulus/original modulus <= 6.0, .DELTA. modulus >= 50MPa, and/or when .DELTA. strength/original strength <= 2.0, .DELTA. strength >= 0.2MPa. Such ice confection prod-ucts have properties which are akin to boiled sweets. Such products cannot be bitten or chewed but must be sucked, resulting in a product which remains in the mouth longer and is more refreshing.
La présente invention a pour objet une confiserie glacée ayant un volume de 1 à 20 mL et une épaisseur supérieure à 5 mm, et comportant une protéine antigel, dans laquelle .DELTA.module/module original >= 0,4 et/ou .DELTA.résistance/résistance originale >= 0,4; à la condition que quand .DELTA.module/module original <= 6, .DELTA.module >= 50MPa, et/ou à la condition que quand .DELTA.résistance/résistance originale <= 2, .DELTA.résistance >= 0,2 MPa. De tels produits de confiserie glacée présente des propriétés voisines de celles que présentent des confiseries bouillies. Etant donné qu'on ne peut pas mordre ni mâcher de tels produits, mais qu'ils doivent être sucés, ils restent plus longtemps dans la bouche et sont donc plus rafraîchissants.
