Disclosed is a process for the crystallization of sucralose from an aqueous solution, the process comprising controlling the pH of said aqueous solution so as to maintain the pH in the range of from about 5.5 to about 8.5 during the formation of sucralose crystals. Also disclosed is crystalline sucralose crystallized from an aqueous sucralose solution having a pH in the range of from about pH 5.5 to about pH 8.5, and a nonhydrous crystalline sucralose having a residual moisture content of from about 0.5 to about 10 percent by weight. This process avoids acidification of the mother liquor that can occur.
Divulgation d'un procédé de cristallisation de sucralose à partir d'une solution aqueuse, ce procédé comprenant le contrôle du pH de ladite solution aqueuse de manière à le maintenir entre environ 5,5 et environ 8,5 pendant la formation des cristaux de sucralose. Divulgation également de sucralose cristallin cristallisé à partir d'une solution aqueuse de sucralose ayant un pH entre environ 5,5 et environ 8,5, et d'un sucralose cristallin non hydraté ayant une teneur résiduelle en eau d'environ 0,5 à environ 10 pour cent en poids. Le présent procédé évite l'acidification de la liqueur mère qui peut se produire.
