INDEPENDENT TEXTURE CONTROL IN COOKIES Abstract of the Disclosure This invention comprises a process for controlling the texture, independently of other attributes, of crumb-continuous cookies having distributed therein discrete regions of storage- stable crisp texture, and discrete regions of storage-stable chewy texture, comprising altering the level of liquids in at least one inner dough which is substantially uniformly encapsulated within at least one distinct outer dough. The texture can be controlled independently of other cookie attributes such as diameter, thickness, color, flavor, and appearance, without requiring any compensating changes in the manufacturing process.
