A blade (26) (26A) for a meat skinning machine (10) has an elongated cutting edge (34) (34A), a top (28) (28A) and bottom surface (30) (30A), and opposite ends (32) (32A). The cutting edge (34) (34A) comprises a series of juxtapositioned scalloped portions (38) each having an arcuate cutting edge (39) and a concaved inclined portion (30). A straight inclined edge (42) is located between each scalloped portion. Each inclined edge (42) has a forward end intersecting with each arcuate cutting edge to create a forwardly protruding point (44) (50). The bottom surface of the blade (30) (30A) is flat and dwells in a single flat plane with said arcuate cutting edges (30) (34A). The blade (26) (26A) is used in conjunction with a gripping roll (16) (16A) having helically arranged teeth (17A).
