ABSTRACT OF THE DISCLOSURE A method of texturising a mycelial fungal mass having reduced turgor and a solids content of between 20% and 40% by weight is disclosed. The method includes rolling the mass between two mutually moving surfaces to elongate the mass into a cylinder in which groups of hyphas are attenuated and entangled to a substantial extent and give a textured structure. Apparatus and a mycelial fungal mass textured to be analagous to the texture of meat, fish or other conventional textured foodstuffs are also disclosed.
