ABSTRACT OF THE DISCLOSURE A method of texturising a mycelial fungal mass having reduced turgor and a solids content of between 20% and 35% by weight is disclosed. The process includes passing the mass under pressure through at least one apertured member whereby the mass is filamented and compacting said filaments to form a textured structure. Apparatus and a mycelial fungal mass textured to be analagous to the texture of meat, fish or other conventional textured foodstuff are also disclosed.
