The invention relates to a method for controlling microorganisms in a sugar- containing aqueous process medium, especially in the sugar industry, using hop bitter acid as active substance, wherein hop bitter acid is dissolved in an aqueous alkaline medium and added to the process medium, wherein the pH value of the added solution is higher than the pH value of the process medium and the hop bitter acid passes from the dissociated to the indissociated form in the process medium.
Procédé de lutte contre des micro-organismes dans un milieu de processus aqueux contenant du sucre, en particulier dans l'industrie sucrière, qui consiste à utiliser de l'acide de houblon comme substance active, l'acide de houblon étant ajouté au milieu de processus après avoir été mis en solution dans un milieu aqueux alcalin. La valeur de pH de la solution ajoutée est plus élevée que la valeur de pH du milieu de processus. Dans le milieu de processus, l'acide de houblon passe de la forme dissociée à la forme non dissociée.
