A method for improving the solubility in water of a protein characterized by irradiating the protein with electron beams. By using this method, the solubility in water of a protein can be improved without denaturing or degrading the protein. On the other hand, aggregates which are not formed in the usual state are formed thereby. Thus, a protein which remains stable in an aqueous solution can be obtained thereby.
Procédé permettant d'accroître la solubilité dans l'eau d'une protéine, caractérisé par le fait qu'on irradie ladite protéine au moyen de faisceaux d'électrons. Le procédé permet d'accroître la solubilité dans l'eau d'une protéine sans la dénaturer ou la dégrader. Il se forme d'autre part des agrégats qui ne se forment pas quand la protéine est dans son état habituel. On obtient ainsi une protéine qui reste stable dans une solution aqueuse.
