L'invention consiste en un procédé d'obtention d'un jus frais de canne à sucre présentant notamment une bonne stabilité de conservation et apte à la préparation de boissons pour la consommation humaine, caractérisé en ce qu'il comporte au moins une étape de filtration tangentielle d'un extrait brut de canne à sucre issu d'une pression à sec.
