ABSTRACT OF THE DISCLOSURE The present invention relates to a method for producing foodstuffs from whole cereal grains. The grains in aqueous phase are subjected to an enzyme treatment to solubilize the starch content of the grains. The grains in dry form are added to the aqueous phase simultaneously with the enzyme used, and the temperature of the aqueous phase is such that before the enzyme is sterilized only dextrins and oligosaccharides are formed. The method is an improvement in that the formation of sugar-protein compounds, such as gluco- proteins, is avoided. The solid phase products obtained can be used as a meat substitute, and the liquid phase products obtained, can be further de- composed to sugars of different kinds.
