Method for the preparation of gliadin- and glutenin-rich fractions from gluten in an aqueous medium and in the presence of an acid, characterised in that the gluten are dispersed continuously or not in water up to a dry substance varying between 5 and 30%, by which * the Ph of the dispersion is monitored between 4,4 and 4,8, and * the gluten- water mixture is submitted to shearing actions, through which the dispersion, continuously or not, can be fractionated in gliadin-and glutenin-rich fractions, by which a single gliadin- rich fraction with a gliadin/glutenin ratio of at least 2,5 is obtained, and a single glutenin-rich fraction with a gliadin/glutenin ratio of less than 0,8 is obtained.
L'invention concerne un procédé de préparation de fractions riches en gliadine et en gluténine à partir de gluten dans un milieu aqueux et en présence d'un acide. Ce procédé est caractérisé en ce que les glutens sont dispersés, en continu ou non, dans de l'eau jusqu'à obtention d'une substance sèche comprise entre 5 et 30 %. Selon ce procédé, le pH de la dispersion est surveillée de façon à être compris entre 4,4 et 4,8 ; le mélange gluten-eau est soumis à des forces de cisaillement qui permettent de fractionner, en continu ou non, la dispersion en fractions riches en gliadine et en gluténine. On obtient ainsi une seule fraction riche en gliadine présentant un rapport gliadine/gluténine d'au moins 2,5 et une seule fraction riche en gluténine présentant un rapport gliadine/gluténine inférieur à 0,8.
