The invention relates to a method for obtaining protein preparations with essentially constant properties with regard to application functionality, within a broad pH range of from about pH 3 to pH 10, by means of extraction from a protein-containing raw material, namely, leguminous plants, cereals or oil seeds. The invention is characterised in that the protein-containing raw material undergoes at least one fluid extraction step and the raffinate and/or extract thus obtained is either fed to a membrane separation process, whereby a retained product is obtained or subjected to a thermal concentration, whereby a concentrate is obtained. The protein preparation with the desired functional properties is contained in the retained product or the concentrate.

L'invention concerne un procédé pour produire des préparations protéiniques, dont les propriétés relatives à la fonctionnalité d'application restent sensiblement les mêmes dans une large gamme de pH allant environ du pH 3 au pH 10, par extraction à partir d'un produit de base contenant des protéines, notamment les légumineuses, les céréales ou les graines oléagineuses. L'invention est caractérisée en ce que le produit de base contenant des protéines est soumis à au moins une extraction liquide, et en ce que le raffinat et/ou l'extrait ainsi obtenu est soumis soit à au moins un procédé de séparation par membrane, qui permet d'obtenir un rétentat, soit à une concentration thermique, qui permet d'obtenir un concentré, ce rétentat ou ce concentré contenant des préparations protéiniques qui présentent les propriétés fonctionnelles souhaitées.
