The invention relates to a method for treating and processing lupine seeds containing alkaloid, oil and protein by means of specific fractionation in order to obtain products comprised of lupine seeds. The invention is characterized by a combination of the following steps: Size reduction and/or deformation of the lupine seeds in discoid flakes; indirect heat input into the discoid flakes through extensive exclusion of water; deoiling of the discoid flakes by introducing a solvent in order to obtain lipids and lipid reduced flakes; debitterization of the lipid reduced flakes by means of an aqueous debitterization process in order to obtain an alkaloid reduced raffinate and an aqueous extract.
L'invention concerne un procédé de traitement et de transformation de graines de lupin renfermant des alcaloïdes, des huiles et des protéines, pour obtenir des produits issus de graines de lupin au moyen d'un fractionnement ciblé. L'invention est caractérisée par la combinaison des étapes suivantes: broyage et/ou déformation des graines de lupin pour obtenir des flocons en forme de disque, introduction indirecte de chaleur dans les flocons en forme de disque qui, dans une large mesure, n'entrent pas en contact direct avec de l'eau, déshuilage des flocons en forme de disque par addition d'un solvant afin d'obtenir des lipides et des flocons à teneur réduite en lipides, retrait de l'amertume des flocons à teneur réduite en lipides au moyen d'un processus de retrait d'amertume aqueux pour obtenir un produit raffiné à teneur réduite en alcaloïde et un extrait aqueux.
