Methods for making an uncooked extruded dough product are provided, comprising extruding a dough composition of pre-gelatinized starch comprising at least about 75 percent of amylopectin, flour, leavening agent and water through a die under conditions so that the dough composition does not exceed 140~F. throughout the extrusion process. The resulting dough product when cooked has a baked specific volume of greater than about 3.0 cc/g. Products of this process, including filled products, are also provided.

L'invention concerne des procédés permettant de fabriquer un produit à base de pâte extrudée non cuite. Lesdits procédés consistent à extruder une composition de pâte de fécule pré-gélatinisé contenant au moins environ 75 pour-cent d'amylopectine, de farine, d'un agent de levage et d'eau, à travers une matrice, dans des conditions telles que la composition de la pâte ne dépasse pas 140 ·F, au long du processus d'extrusion. Le produit de pâte résultant, lorsqu'il est cuit, possède un volume spécifique à l'état cuit supérieur à environ 3,0 cc/g. Cette invention a également trait à des produits de ce processus, y compris des produits fourrés.
