ABSTRACT OF THE DISCLOSURE There is disclosed to a method of improving the quality of flour by subjecting the flour to contact with gaseous ammonia. The method includes the step of bringing the flour into contact with gaseous ammonia at a temperature equal to or above the boiling point of ammonia and for a duration of from about one to several hours, and there- after completely removing the ammonia from the flour.
