The invention concerns a novel method of preparing optically active amino acids and amino acid derivatives of general formula (I), in which *, X and R1 to R4 have the meanings given in the description. High yields of the enantiomerically-pure compounds of formula (I) are obtained from commercial (- )-menthol or (+)-menthol. The method is particularly suitable for preparing sterically demanding amino acids and amino acid derivatives.

L'invention concerne un procédé de production d'acides aminés optiquement actifs et de dérivés d'acides aminés de la formule générale (I) où *, X et R?1¿ à R?4¿ ont la signification donnée dans la description. On obtient les composés énantiomériquement purs de la formule (I) avec de hauts rendements à partir de (-)-menthol ou (+)- menthol commercialisés. La méthode est particulièrement adaptée à la production d'acides aminés et de dérivés d'acides aminés stériquement exigeants.
