The invention relates to mixed crystals comprising a) leavening agents and b) 0.1 to 5000 ppmw, relative to the total amount of leavening agents, of crystallization promoters in the form of at least one polymer, wherein when using hydrophilic cellulose derivatives as crystallization promoters, the amount thereof is reduced to less than 100 ppmw relative to the total amount of leavening agents. The present invention further relates to the production of mixed crystals and to the use thereof in the production of baked goods, as acidity regulators in foods, in the manufacture of cosmetic products, in the synthesis and formulation of pharmaceutical products, and as blowing agents in technical processes such as the manufacture of foam rubber or for fire extinguishing formulations. The present invention further relates to the production of baked goods.
La présente invention concerne des cristaux mixtes contenant a) un agent de fermentation pour boulangerie et b) 0,1 à 5000 ppm en masse d'un auxiliaire de cristallisation, par rapport à la quantité totale de l'agent de fermentation pour boulangerie sous la forme d'au moins un polymère. Si l'on utilise des dérivés hydrophiles de la cellulose comme auxiliaire de cristallisation, leur quantité est réduite à moins de 100 ppm en masse par rapport à la quantité totale de l'agent de fermentation. La présente invention concerne en outre la fabrication de cristaux mixtes et leur utilisation dans la production de produits de boulangerie, comme régulateurs d'acidité dans les denrées alimentaires, dans la production de produits cosmétiques, dans la synthèse et la formulation de produits pharmaceutiques ainsi que comme agent de fermentation dans des procédés techniques tels que par exemple la production de caoutchouc mousse ou la formulation d'agents d'extinction des incendies. L'invention concerne en outre la production de produits de boulangerie-pâtisserie.
