ABSTRACT OF THE DISCLOSURE There is disclosed an unpuffed cooked cereal grain composition suitable for manufacture of fried snack foods, said composition comprising a total moisture content of about 20% to 35%, about 3% to 8% of added vegetable oil and the remainder being principally cooked grains and optionally pieces of food. The added oil minimizes absorption of oil on frying of the composition and improves mouth feel and texture of the fried products. The grain composition is preferably a wheat based multigrain composition which is processed in a twin screw cooker extruder.
