A biomimetic odor sensor that makes no use of an oxide semiconductor or quartz oscillator, being less susceptible to atmospheric moisture, and that has a simple structure, realizing reduced production cost, and that exhibits high reaction rate, being wet so as to be close to the state of nasal mucosa of human olfactus organ. There is provided odor sensor (10) comprising mixed material (12) having .beta.-carotin and a reducing agent capable of preventing the oxidation of .beta.-carotin dispersed in a viscous liquid, and comprising, disposed in contact with the mixed material (12), negative electrode (16) and positive electrode (18).

Il est prévu un capteur d~odeur biomimétique ne recourant ni à un semi-conducteur d~oxyde ni à un oscillateur à quartz, moins sensible à l~humidité de l~atmosphère, et de simple structure, d~un coût de fabrication réduit et présentant une vitesse de réaction élevée, humidifié pour se rapprocher de l~état de la muqueuse nasale d~un organe olfactif humain. Il est ainsi prévu un capteur d~odeur (10) comprenant un matériau mélangé (12) possédant de la .beta.-carotine et un agent réducteur capable d~empêcher l~oxydation de la .beta.-carotine dispersée dans un liquide visqueux et contenant, au contact du matériau mélangé (12), une électrode négative (16) et une électrode positive(18).
