[PROBLEMS] To provide an oil-in-water type emulsion food which contains vegetable sterol capable of lowering blood cholesterol level, shows a smooth texture on the tongue and has a high emulsion stability. [MEANS FOR SOLVING PROBLEMS] An oil-in-water type emulsion food containing a complex of vegetable sterol with yolk lipoprotein is obtained. This oil-in-water type emulsion food can be obtained by a production process which comprises the step of mixing yolk lipoprotein with vegetable sterol optionally together with an aqueous medium under stirring to give a liquid dispersion of a complex, the step of adding, if needed, an aqueous phase material followed by mixing under stirring, and the step of further adding an oily phase material followed by emulsification.
La présente invention porte sur un produit alimentaire en émulsion huile-dans-eau contenant un stérol végétal capable de réduire le niveau de cholestérol sanguin, qui possède une texture lisse sur la langue et un stabilité d'émulsion élevée. Le produit alimentaire en émulsion huile-dans-eau de l'invention comprend un stérol végétal et une lipoprotéine de jaune d'oeuf. On obtient le produit alimentaire en émulsion du type huile-dans-eau de l'invention selon un procédé de production comprenant une étape au cours de laquelle on mélange par agitation une lipoprotéine de jaune d'oeuf avec un stérol végétal et, facultativement, avec un milieu aqueux afin d'obtenir une dispersion liquide d'un complexe, une étape au cours de laquelle on ajoute, si nécessaire, un matériau en phase aqueuse que l'on mélange par agitation, et une étape au cours de laquelle on ajoute encore une matière en phase huileuse avant de procéder à une émulsification.
