A composition is disclosed comprising a partially hydrolysed cereal protein. The partially hydrolysed cereal protein is characterised in that 20% to 80% by weight has a molecular weight of 25 kDa or greater 8% by weight or less has a molecular weight of 1.4 kDa or lower and in that it has a nitrogen solubility index of 90% or greater at pH 1 to 10. The preferred cereal protein derives from wheat. Also disclosed is a process for producing the composition comprising providing a slurry having a degree of hydrolysis of 3 to 8, determining the pH, adjusting the pH of the slurry and separating the aqueous-soluble portion of the slurry. Compositions according to the invention find use as milk protein replacements and as components in nutritional supplements, sports drinks,or food products including beverages.

La présente invention concerne une composition qui comprend une protéine de céréale partiellement hydrolysée. La protéine de céréale partiellement hydrolysée se caractérise en ce que 20 à 80 % en poids présente un poids moléculaire supérieur ou égal à 25 kDa, au maximum 8% en poids présente un poids moléculaire inférieur ou égal à 1,4 kDa et en ce que son indice de solubilité d'azote est supérieur ou égal à 90% à un pH compris entre 1 et 10. La protéine de céréale préférée provient du blé. Cette invention porte également sur un procédé de production de la composition qui consiste à utiliser une suspension ayant un degré d'hydrolyse compris entre 3 et 8, à déterminer le pH, à ajuster le pH de la suspension et à séparer la partie aqueuse-soluble de la suspension. Les compositions selon l'invention peuvent être utilisées en tant que substituts des protéines de lait et en tant que constituants dans des additifs nutritionnels, des boissons pour sportifs ou des produits alimentaires y compris des boissons.
