The process provides particulate flavour compositions having a flavour oil fixed in a particulate polyol material. It consists in mixing a mono- or disaccharide, a polysaccharide and water with a minor but flavour effective amount of a flavour oil such that the resulting particular flavour compositions possess a Tg below room temperature, and extruding the resulting homogeneous substrate at a temperature to form a melt which on cooling solidifies as a hard rubbery amorphous material having said flavour oil entrapped therein.

Un procédé permet de produire des compositions aromatisantes particulaires qui contiennent une huile aromatisante immobilisée dans un matériau polyol particulaire. Selon ce procédé, on mélange un monosaccharide ou un disaccharide, un polysaccharide et de l'eau avec une quantité réduite mais aromatisante d'une huile aromatisante, de sorte que les compositions aromatisantes ainsi obtenues aient une Tg inférieure à la température ambiante. On extrude le substrat homogène ainsi obtenu à une température suffisante pour former une masse fondue, qui lorsqu'elle se refroidit, se solidifie et forme un matériau amorphe dur et caoutchouteux dans lequel l'huile aromatisante est encapsulée.
