ABSTRACT OF THE DISCLOSURE Dough and pasta products are disclosed which contain soya to an amount between 5 and 65% by weight in the form of grits or a mixture of flour and grits which has been debittered and the trypsin inhibitor in the debittered soya has been substantially deactivated or removed. The products have increased protein content, reduced carbohydrate content, exhibit good consistency, a pleasant flavour, and contain only natural substances.
