A process for the production of a fermenting material which comprises forming a dough by adding water to a dried gluten in an amount of from 19 to 60 % by weight based on the weight of the dough, pelletising the dough and, if necessary, adding water to adjust the moisture content to from 35 to 60 % by weight based on the weight of the pellets before sterilising the pellets by steam treatment. A koji product produced by koji making using one or more fermenting materials obtained as well as a seasoning produced therefrom.

L'invention se rapporte à la fabrication d'une substance de fermentation et consiste à former une pâte en ajoutant au gluten sec de l'eau dans des quantités comprises entre 19 et 60 % en poids sur la base du poids de la pâte, à granuler la pâte et, si nécessaire, à ajouter de l'eau pour faire passer la teneur en eau de 35 à 60 % en poids, sur la base du poids des granules avant leur stérilisation par la vapeur. L'invention se rapporte également à un produit à base de koji, que l'on obtient pendant la fabrication du koji au moyen d'une ou de plusieurs substances de fermentation ci-décrites, ainsi qu'à un assaisonnement.
