ABSTRACT OF THE DISCLOSURE The present invention provides a dry substantially odourless, tasteless modified vital gluten composition prepared by dispersing wet vital gluten in a food grade hydrophobic liquid in the presence of an edible emulsifier, reducing the pressure from ambient, elevating the temperature from ambient to below the denaturation temperature of wet gluten and separating the dried gluten from the liquid. The substantial reduction in odour and taste typical of gluten allows the product of the invention to be utilized in many food applications not possible with normal vital gluten.
