There is provided a method and apparatus for forming meat analog products and for texturizing a doughmass wherein the ingredients are mixed, passed through a conduit having a decreasing cross-sectional area while the doughmass is heated therein, the heating being done such that a greater heat intensity is applied to the center of the doughmass than to the doughmass adjacent the walls of the conduit.

Procédé et appareil permettant d'obtenir des produits analogues à la viande et de conférer une texture à une pâte. Selon ce procédé, les ingrédients sont mélangés et acheminés à travers un conduit d'une superficie de section décroissante tandis que la masse est chauffée dans le conduit, le chauffage étant effectué de façon que la chaleur appliquée au centre de la pâte soit plus intense que celle appliquée aux parties de la pâte adjacentes aux parois du conduit.
