A process and composition for preparing D-aspartic acid and .beta.-alanine from D,L-aspartic acid, wherein a solution of D,L-aspartic acid or a salt thereof is contacted with a composition having an L-aspartate-.alpha.- decarboxylase activity of greater than 100 µmol L-aspartate used per hour per gram of cells, under appropriate conditions to produce D-aspartic acid and .beta.-alanine.

L'invention a trait à un procédé ainsi qu'à la composition afférente permettant d'élaborer de l'acide D-aspartique et de la beta -alanine à partir d'acide D, L-aspartique. Selon ce procédé, on met en contact une solution d'acide D, L-aspartique ou de l'un de leurs sels et une composition dont l'activité L-aspartate- alpha -décarboxylase est supérieure à celle de 100 mu mol de L-aspartate utilisé par heure par gramme de cellules et ce, dans des conditions susceptibles de permettre la production d'acide D-aspartique et de beta -alanine.
