A low salt protein solution not capable of forming a gel is obtained from animal muscle tissue by forming an aqueous acidic protein solution which is filtered to remove salt and acid. The low salt protein solution can be formed into a gel by adding a physiologically acceptable salt to the low salt protein solution and heating the resultant protein solution with added salt.

Selon l'invention, pour obtenir une solution protéique à faible teneur en sel qui n'est pas capable de former un gel à partir d'un tissu musculaire animal, on forme une solution protéique acide aqueuse qui est filtrée pour en éliminer le sel et l'acide. Pour transformer en gel la solution protéique à faible teneur en sel, un sel acceptable sur le plan physiologique est ajouté à la solution protéique à faible teneur en sel et la solution protéique ainsi obtenue est chauffée avec le sel ajouté
