Crystals of L-.alpha.-aspartyl-L-phenylalanine methyl ester are provided in a novel state in which large diameter crystals are bundled to have the form of simple crystals; the crystals have good separability and can be readily removed to a cooling surface on which they are foamed; the crystals are produced in a process in which a solution of the ester having a concentration effective to provide an amount of precipitated solid phase, after cooling, of at least about 10g per litre of solvent, is cooled by conductive heat transfer to form an apparently sherbet-like pseudo solid phase in the absence of forced flow conditions; the cake of crystals thus formed has a significantly lower solvent content than in prior methods, so that drying requirements are reduced.
