ABSTRACT OF THE DISCLOSURE A process for preparing retort stable simulated meat products is disclosed. An aqueous admixture is prepared of a plurality of pieces of edible protein material together with an inhibited starch material having a specified Granular Swelling Power. The blend is cooked to gelatinize the inhibited starch material without substantially affecting the protein. The cooked product is then cooled and is characterized by being retort stable.
