The invention relates to a process for producing coagulated leguminous protein fractions of MW > 14, comprising: initial charging of fruit juice; coagulation of the leguminous protein; removal of a leguminous protein fraction whose majority has an MW of from > 14 kD to approx. 600 kD; optionally washing the coagulated leguminous protein fraction thus obtained; and optionally drying the leguminous protein fraction, and to the use of the leguminous protein fraction as a food, food additive, medicament additive, animal feed, in cosmetics, as industrial protein, as an adhesive.
L'invention concerne un procédé de fabrication de fractions protéiques coagulées de légumineuse d'un poids moyen (MG) > 14, comprenant les étapes suivantes : prise de jus de fruit ; coagulation de la protéine de légumineuse ; séparation d'une fraction protéique de légumineuse dont la part principale a un poids moyen (MG) supérieur à 14 kD jusqu'à environ 600 kD ; si nécessaire lavage de la fraction protéique coagulée de légumineuse ainsi obtenue ; et le cas échéant séchage de la fraction protéique de légumineuse et utilisation de la fraction protéique de légumineuse comme aliment, additif alimentaire, complément médicamenteux, alimentation animale, dans la cosmétique, comme protéine technique, comme colle.
