ABSTRACT OF THE DISCLOSURE A process for preparing protein material for use in making analogue meats is disclosed. Vegetable protein is first subjected to gelation by heat. The resultant base protein material is then immersed in an acidic solution to thereby make the protein material white in color and provid- ed with texture simulating that of natural meats.
